Is the writing style from essay services suitable for university submission?
I’ve ordered a couple of papers from different essay sites to use as “models.” The content is mostly solid, but the writing style feels... off. Too formal in places, weird vocabulary, or sometimes overly simple. Can professors tell it’s not student-written? Is the style actually suitable for direct university submission, or do you always have to rewrite it to match your own voice?

That is rather standard in my experience, and it does not imply that the service is poor. Model papers are typically created to be technically correct rather than to completely fit one student's voice. Professors do not "detect services," but they do notice writing that appears strange to you.
